Recently, I came across a new brand of Paneer at the local Desi store. Having tried various brands like Nanak, Swad, Joy, Gopi Store, and others, I am always open to experimenting with new ones. The packaging clearly stated "No Gelatin, No Animal Rennet."

The exclusion of Animal Rennet caught my attention. According to Google, many hard cheeses are made using Rennet, a natural substance containing enzymes found in the fourth stomach lining of young goats, calves, and lambs. Rennet's complex set of enzymes, including chymosin, pepsin, and lipase, plays a crucial role in curdling milk for easier digestion during cheesemaking. Traditionally, most hard cheeses like Parmesan, Cheddar, Manchego, Pecorino Romano, and Swiss are crafted using rennet. However, some cheeses, such as Ricotta, utilize acid for coagulation instead of rennet. Ingesting rennet can lead to irritation, burning sensations in the mouth and throat, nausea, vomiting, and abdominal pain.

Upon slicing the paneer into cubes, I noticed its smooth texture, not flaky. It cooked well overall and had a decent taste. Unlike some other brands, it didn't turn yellowish or rubbery and maintained a soft texture after cooking.
